Do you crave chocolate, but maybe the versions of skinny chocolate you have tried just haven't satisfied that craving? After years of doing THM and trying different versions, I decided to try my own. This recipe does call for some special ingredients in that it uses both erythritol and THM Super Sweet (Can be swapped out with Pyure). It also calls for a couple different varieties of extracts. I buy my extracts from Olivenation.com. I am not an affiliate there. If you sign up for their emails, they will email you coupon codes for sales. All of that to say, this chocolate is yummy! Tweak the sweeteners as desired. I've made it both with and without the optional 1/2 tsp of THM Pure Stevia. I like it best in a thin layer versus a thick chunk.

2 cups cold-pressed coconut oil
1 cup cocoa powder
1 cup defatted peanut flour
1/4 cup THM Super Sweet (or Pyure)
1/2 cup Erythritol
1/2 Tbsp Caramel extract
1/2 Tbsp Vanilla extract
1/2 Tbsp Maple extract
1/2 tsp Brown Sugar extract
1/4 tsp Mineral salt
1/2 tsp THM Pure Stevia (optional)
Directions: Simply mix your melted coconut oil with rest of ingredients. I threw all my stuff into my vitamix container, blended it well, then pour it into molds or a parchment lined cooked sheet. Refridgerate until firm, then remove from molds and store in the freezer. Enjoy!
Defatted peanut flour is allowed in Deep S mode in quantities up to 1 Tbsp.
